Phoenix's bar scene has quietly developed a culture of unpublished menus — if you know to ask.
Phoenix used to be a town where you ordered what was on the board and didn't push your luck. That's changed. A handful of Valley bars have quietly built off-menu programs that reward the curious — and sometimes just the bold enough to ask.
At The Breadfruit in downtown Phoenix, the kitchen shares space with a bar program that rotates seasonal cocktails not listed anywhere publicly. The bartenders field the "what's good tonight?" question with genuine enthusiasm and tend to pour something involving rhum agricole or Falernum that you won't find on any menu.
Postino Wine Cafe locations have always had a small selection of rotating pours that don't make it to the printed list. The trick is arriving at the early part of happy hour and asking which bottles they're trying to move before the crowd arrives. You'll often land something excellent at a steep discount.
Crescent Ballroom's back bar runs specials that get written on a chalkboard that's easy to miss if you're headed straight for the stage. The mezcal selections back there deserve more attention than they get.
The lesson across all of these is simple: Phoenix bartenders are more knowledgeable and creative than the menus suggest. Come in, say hello, and ask what they're excited about. You'll drink better for it.
