The Valley's independent pizza makers are doing things the chains can't replicate.
Phoenix's pizza landscape is dominated by chains to a degree that independent operators find frustrating, but the independent scene that exists is producing genuinely exceptional work.
Pomo Pizzeria is the benchmark. Owner Stefano Fabbri uses a Neapolitan oven imported from Italy and flour from specific Italian mills. The certification from the Associazione Verace Pizza Napoletana is meaningful — the crust achieves the char, chew, and leopard spotting the style requires.
Cibo Urban Pizzeria in Midtown occupies a historic bungalow and produces thinner-crust pies with a crispness that pairs well with their roster of local beer. The casual setting understates the kitchen's attention.
Forno 301 in downtown Phoenix uses a wood-fired approach with sausage produced in-house — it shows in every bite.
For by-the-slice: Pizzeria Bianco's takeaway counter at Town & Country has democratized access to one of the best pizza kitchens in the country.
